- 1 Orange (zest of 1 orange)
- 1/4 cup orange juice
- 1 tsp. vanilla paste (or extract)
- 2 Tbsp. rum (or other sweet liquor optional)
- 1 cup almond flour
- 1/2 cup millet flour
- 1/4 cup arrowroot starch (or tapioca starch)
- 2 tsp. ground cinnamon
- 1 tsp. ginger powder
- 1/2 tsp. grated nutmeg
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 pinch salt
- 2 cups shredded carrots (or 8 ounces) about 3 large carrots)
- 1/2 cup roasted walnuts (chopped)
- 1/2 cup raisins
- 8 oz. cream cheese (container of, room temperature I like Kite Hill cream cheese spread plain, but you can use regular)
- 3 Tbsp. maple syrup (or agave nectar)
- 1/2 tsp. vanilla paste
- 1/2 Orange (zest of half an orange)
