- 1 Tbsp. baking soda
- 1 Tbsp. cinnamon
- 15 cups vegetable oil
- 4 large eggs (beaten)
- 1 Tbsp. vanilla extract
- 15 walnuts (roughly chopped)
- 15 shredded coconut
- 1 1/3 cups carrots (puréed cooked, to do this, just boil carrots until soft then chuck in a food processor!)
- 3/4 cup crushed pineapple (drained)
- cream cheese frosting (find my recipe here!)
