Description
One of the more underrated cakes out there, carrot cake is full of flavor and the helping of vegetables doesn't hurt. This version features warming cinnamon, crunchy walnuts, and sweet coconut for a delicious combination of flavors that pair perfectly with the sweet earthiness of the carrots. To top it all off, a cream cheese icing is spread across the top for a stunning finish.

- 2 tsp. baking powder
- 1/4 tsp. cinnamon
- 2 eggs
- 100 mL vegetable oil (neutral)
- 100 mL milk
- 240 grams brown sugar
- 2 tsp. vanilla extract
- 225 grams chopped walnuts
- 225 grams carrots (grated)
- 50 grams grated coconut
- 120 grams cream cheese
- 200 grams icing sugar

Directions
- Preheat oven to 355 degrees Fahrenheit.
- In a large bowl, mix the flour, salt, baking powder and cinnamon. Set aside.
- In another bowl, mix the eggs, oil, milk, sugar and 1 teaspoon of vanilla extract.
