    Great recipe. Nutritious! Love all the texture! Made muffins with it. Delicious just plain but also good with icing. It’s crumbly but full of carrots, coconut, and walnuts. Awesome with coffee, for breakfast!

    Great! Love the cake. I made a different cream cheese frosting, one that called for vanilla extract and made a larger amount.
