  • 1/4 teaspoon nutmeg
  • 1 1/2 teaspoons salt
  • 1 cup raisins
  • 1 cup chopped pecans
  • 1 pound carrots (peeled and grated)
  • 1/2 cup crushed pineapple (drained)
  • 1 package cream cheese (I used 1/3 less fat, at room temperature)
  • 1 cup unsalted butter (at room temperature)
  • 1 teaspoon vanilla extract
  • 4 tablespoons milk
  • 1 pound powdered sugar

    Really gorgeous! Grated some Granny Smith apples to replace the shredded pineapple, which I didn’t have. Will definitely make it again.
