    Great! I normally don’t even like carrot cake but made this on someone else’s request. Cake and frosting are very tasty

    I love the addition of coconut to a traditional carrot cake. Delicious and sweet!

    It was amazing!! I would recommend cooking it 45-50 minutes though and not 55 minutes. Edges got a little brown but it was amazing still! Definitely will make it again

    This cake was amazing! We did change a couple of things: we didn’t add nuts, we added an extra cup of shredded carrot, we doubled the amount of pineapple (we used fresh pineapple), and an extra 1/4 cup of flaked coconut. Also, best cream cheese icing I’ve had.

    Amazing, delicious moist and the pineapple Makes its. I’ve never had that in carrot cake before. We don’t like walnut so we used chunk pineapple instead of crushed for texture it was great!

    Loved the cake recipe-it was my first time making a carrot cake myself, the cake was perfect-moist, flavorful, and not too sweet! Wasn’t too crazy about the frosting, it was to sweet and over powering to the cake but all in all it was good! Would make it again!
