- 7 lb. pork shoulder roast (he calls for bone-in, but we had boneless)
- 1/4 cup firmly packed brown sugar
- 1/4 cup sweet paprika
- 3 Tbsp. freshly ground black pepper
- 3 Tbsp. coarse salt
- 1 Tbsp. salt (hickory-smoked, or additional coarse salt)
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. celery seed
- 1 tsp. cayenne pepper
- 1 cup cider vinegar
- 1 onion (small, thinly sliced)
- 2 jalapeño peppers (thinly sliced)
- 1 Tbsp. coarse salt
- 1/2 btl. beer (this is Scott's addition. The other half is for you.)
- 12 hamburger buns
- coleslaw
- 6 cups chips (hickory wood, smoker boxes, gas grill or charcoal grill.)
