- 3 Tbsp. bacon grease (you could also use lard)
- 3 lb. pork shoulder (also called Boston Butt roast, cut into big 3" chunks)
- kosher salt (to taste)
- 10 garlic cloves (peeled and smashed)
- 1 white onion (large, roughly chopped)
- 3/4 cup milk
- 3/4 cup orange juice
- 1/4 cup lime juice
- 1/4 cup jalapeño pepper (pickled, slices)
- 1/4 cup pickling liquid (jalapeño)
- 1 tsp. orange zest
- 12 oz. grape tomatoes (finely diced)
- 1 sprig cilantro (bunched together, and chopped)
- 1 large garlic clove (peeled, smashed, and minced)
- 1/2 cup purple onion (finely chopped, you can use a sweet white if you need to)
- 1/2 jalapeño pepper (a fresh, seeded, and minced, wearing gloves is smart)
- 2 tsp. fresh lime juice
- 3/4 tsp. sea salt (you can use more, or less, to taste)
- corn tortillas (Warmed, flour is fine, too)
- guacamole
- radishes (finely sliced)
- sour cream
