- 3 lb. pork shoulder roast (or butt)
- 1 Tbsp. canola oil
- 1/2 tsp. pepper
- 1 1/2 tsp. salt
- 1 Tbsp. smoked paprika
- 1/2 Tbsp. cumin
- 1 1/2 tsp. onion powder
- 2 tsp. chili powder (chipotle)
- 1 tsp. oregano
- 1/4 tsp. cayenne
- 1/2 tsp. garlic powder
- 12 oz. beer (mexican)
- 1/2 cup orange juice
- 2 limes (juiced)
- 2 cups carnitas
- 1 oz. fire roasted tomatoes (lightly drained)
- 3 chipotle chilies (in adobo, finely chopped, I used 3)
- 2 Tbsp. olive oil
- 1 onion (small, diced, optional, i left mine out)
- 2 cloves garlic (minced or grated)
- 1 1/2 cups low sodium chicken broth
- 16 oz. tortilla chips (bag of)
- 1 cup grated Monterey Jack (pepper jack or cheddar cheese or a combo of all three)
- 5 fried eggs
- cotija cheese
- fresh cilantro
- avocado
- sliced mango
- salsa (fruit)
- 1/2 cup plain greek yogurt
- 4 oz. cream cheese
- 1 Tbsp. honey
- 2 jalapeños (or 1 large, finely chopped and seeded if desired)
