This turned out exceptionally bitter when I made it. I tried different things to try and cut the bitter taste - teriyaki sauce, cajun seasoning, sugar, etc.. Nothing was able to save this dish and I ended up throwing it out. Just a NO for me.

Followed the recipe step-by-step, but at the end there was still plenty of water and it was kind of like a Carribean rice soup. A bit tasteless as well.

This was delicious, I actually cut way back on the cumin & thyme & used chicken stock for half the liquid. I think 4 cups is too much, though, because ours turned out soupy. I will make again and cut back to 3.5 Cups.

the rice didn't have as much flavor as i thought it would have but it was super easy to make and still yummy.

Great.! I used two cans of beans, used brown rice and added a chopped green chili. Since I didn’t have a rice cooker I used a pot and cooked on the stove. It took longer to cook with the brown rice and I needed to add water since it did stick some. Love how simple this was and had all the ingredients on hand. I will be making again!!

Substituted canola oil for coconut oil and did not have a rice cooker so I cooked rice separate then threw everything into a large frying pan with the garlic. Added 2 tablespoons of Jamaican Curry Powder and my family absolutely loved it! Will definitely be making again!

First, let me start by saying cooking is not my strength. I transitioned to a whole food plant-based diet a while back and am searching for ways to spice up my foods. This recipe was super easy to follow. This rice is very flavorful, but Caribbean is not the taste I would use to describe it. There are Caribbean spices used which gives it a good flavor.
Some adjustments I made: I used my Instant Pot to make this recipe. I also used Lundberg Organic Brown Rice so it took a little more time, about 40 minutes. I soaked my brown rice overnight and used dry red beans. I don't cook with oil so I sauteed the garlic in water. Also, I only used 5 garlic cloves. The thyme taste is a little much for me so next time I will use 1 tsp. Since I batch cook, this will last me all week. It is a dish I will keep in my rotation.

Slightly bland, but a good source of beans, turmeric and cumin. Kids didn't much care for it.

This was a last minute meal and I had all the ingredients in my cabinet . It was delicious and my guys really enjoyed it!
