- 1/2 bell pepper (chopped)
- 1 jalapeno pepper (small, seeded and chopped, optional)
- 4 cloves garlic (minced)
- 2 tsp. ginger root (peeled, chopped)
- 2 cans black beans (about 3 cups cooked, rinsed well and drained)
- 3/4 cup unsweetened pineapple juice
- 1 tsp. dried thyme
- 1/2 tsp. allspice
- 1/4 tsp. cayenne (more or less, to taste)
- 1 cup fresh pineapple (chopped)
- salt
- black pepper
- 1 plantain (very ripe, for every 2 people, look for large black spots)
- canola oil (in a sprayer or applied with brush or paper towel, optional, but plantains are “sticky” so use if your bakeware isn’t non-stick)
