  • 800 grams stewing beef (We used Ox cheeks but any stewing beef will do)
  • 4 garlic cloves (minced)
  • 1 tablespoon jerk seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 1 handful fresh thyme
  • 4 tablespoons Worcestershire sauce (or Hendersons Relish if you prefer)
  • 1 teaspoon gravy browning
  • 2 onions (large, chopped)
  • 3 large carrots (chopped)
  • 1 stick celery (chopped)
  • 200 grams swede (chopped)
  • 1 can chopped tomatoes (400g/15oz tin/can)
  • 2 bunches spring onions (chopped)
  • 1 tablespoon ground allspice (NOT Mixed Spice!!!!!!!)
  • 1 tablespoon red wine vinegar
  • 1 tablespoon hot sauce (or 1/2 tsp of chilli powder)
  • 400 milliliters beef stock
  • 400 milliliters boiling water
  • 1 can butter beans (drained - 400g/15oz tin/can)
