- 2 cups chicken meat (diced, great for leftovers or use a rotisserie chicken)

- 1 cup shredded coconut

- 3 limes (fresh)
- 14.5 oz. coconut milk
- 8 dashes hot sauce (we prefer the Mexican-style Valentina)
- 1 bunch fresh cilantro (chopped)

- 1 box cornbread (Jiffy, prepared according to package directions, uses 1/3 cup milk + 1 egg)
- 3 green onions (chopped, both white and green parts)
