- 1 head garlic (broken into cloves but not peeled, I would not bother with tiny cloves)
- 2 Tbsp. olive oil (plus extra for drizzling garlic cloves)
- 15 oz. fire roasted tomatoes (such as Muir Glen)
- 8 oz. beans
- 4 cups broth
- 1 large red onion (chopped)
- 1 large carrot (chopped)
- 1/2 bell pepper (sweet, chopped)
- 1 jalapeno (chopped, optional)
- 1 1/2 tsp. ground cumin
- 1 tsp. Mexican oregano (dried)
- 1/2 tsp. cayenne pepper (I used New Mexico to reduce heat and served with chipotle powder)
- 2 cups chicken broth
- salt
- pepper
- sour cream
- cilantro
- Monterey Jack cheese
- lime wedges
- avocado (I did not have)
- chipotle powder (for smoky heat)
