- 2 cups dried beans (soaked and drained, or 6 cups of cooked beans, rinsed and drained)
- 6 cups water
- 2 1/2 cups chopped onion
- 2 Tbsp. minced garlic
- 2 1/2 cups shredded zucchini (or diced, but I used previously frozen shredded-if you don't have any, or not in season, feel free to omit)
- 1 cup carrot (chopped)
- 1 cup chopped bell pepper (any color)
- 1 cup diced celery
- 1 pt. stewed tomatoes
- 2 cups fresh tomatoes
- 1 Tbsp. cumin
- 2 tsp. corriander
- 1 3/4 tsp. sea salt (or kosher)
- 1/2 tsp. smoked paprika
- 1/2 tsp. ground black pepper
- Less than 1/16 tsp. cayenne (depending on your heat preference, start easy)
- 1 cup orange juice
