- 1/2 cup pear juice (I used this, see note below about high altitude)
- 1/3 cup honey
- 3 Tbsp. oil (such as canola or vegetable)
- 1 egg (+ 1 egg white)
- 1 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1 cup pear (shredded, approximately 1 large pear)
- toasted sliced almonds (for topping the bread, optional)
- 3/4 cup powdered sugar
- 1 Tbsp. pear juice (plus more if needed)
- 1/2 tsp. almond extract
