- 1 lb. spaghetti (or bucatini)
- 1/4 cup EVOO (– Extra Virgin Olive Oil)
- 1/2 lb. guanciale (meaty, or pancetta, chopped)
- 2 spring onions
- 1 shallot
- 2 zucchini (small spring, halved lengthwise and thinly sliced or 1 medium zucchini, halved lengthwise, seeded with a spoon then thinly sliced)

- 1 Tbsp. fresh thyme leaves (chopped)
- 4 cloves garlic (chopped)
- 4 egg yolks (large Araucana or organic brown)
- 1 lemon (1 teaspoon zest, juice of 1/2 plus thinly sliced lemon zest to serve)
- 1/2 cup Parmigiano Reggiano (grated)
- 1/2 cup pecorino romano (grated)
- crushed red pepper flakes (to serve)
