Use white onions for sure and monitor the roasting of the rice closely

Loved it!! Easy but so Rich Tasting. Like another reviewer stated—I left the bacon grease in the pan, which I’m sure added even more flavor (and calories—but worth it)! I didn’t have any fresh chives, but don’t feel like the dish suffered. Will definitely make it again & again.

Followed recipe exactly and it came out perfect. Other post said to remove bacon grease, I left it in and found it cooked it just fine and added an extra layer of flavor. It’s important to slowly add the chicken broth otherwise it absorbs to quickly and won’t finish properly. Served with marinated flank steak and fresh steamed broccoli

The recipe doesn't say to remove the bacon fat from the pan before cooking the shallots and garlic but you definitely should! Other than that, amazing!
