  • 5 medium carrots (large, or 8, trimmed and diagonally sliced)
  • 2 leeks (trimmed and diagonally sliced)
  • 3 tablespoons butter
  • 3 tablespoons fresh thyme leaves
  • 1 tablespoon brown sugar
  • 2 tablespoons white wine vinegar

    Directions

    1. Blanch the carrots in a pan of boiling, salted water for 2-3 mins then drain. Heat the butter in a non-stick skillet, add the carrots, leeks and thyme and sauté for 4-5 mins. Sprinkle with sugar and leave to caramelize for 1-2 mins then deglaze the pan with vinegar and season. Serve.
