- 1 gal. garlic cloves (medium, peeled and minced)
- 1 Tbsp. olive oil
- 1/2 Tbsp. balsamic vinegar
- 1 pinch sea salt
- 1 pinch raw sugar
- salad greens (fresh, enough to cover your plate, I used baby winter lettuces from my garden)
- 1 orange peel (Cara Cara, and all pith removed with a sharp knife, and sliced cross-wise)
- 1/2 beetroots (medium Chiogga, peeled and sliced paper thin on a mandoline)
- 1 handful cilantro (minced, or substitute parsley)
- crumbled goat cheese (or substitute feta)
- 1 pinch crushed red pepper (optional)
