  • 8 steaks (thin cut, about 3.5 oz each)
  • 2 tablespoons olive oil
  • 2 3/4 ounces basil pesto
  • 2 medium tomatoes (each cut into 8 slices)
  • 8 3/4 ounces mozzarella (cut into 16 slices)
  • fresh basil (for garnish)
  • ciabatta (Sliced, to serve)

    Directions

    1. Preheat the oven to 400°F. Season the steaks to taste. Heat the oil in a non-stick frying pan and fry the steaks, turning, for 2 mins. Transfer into a roasting pan and pour in the pan juices.
    2. Brush the steaks with the pesto, then top each with 2 slices tomato and 2 slices mozzarella. Roast for 5 mins. Garnish with basil and serve with ciabatta.
