Description

In this whimsical, springtime spin on cappuccino, a chilled pureed pea soup is topped with mint-infused whipped cream (unsweetened) that’s sprinkled with dried chile powder—Espelette is called for here, but other chiles work just as well. If you don…

t have a siphon, you can whip the cream with a mixer. Serve as an hors d’oeuvre with cocktails, or as a starter course at a dinner party where roast lamb is on the menu.
