This was a hit.My first try at baking ginger snaps. They went pretty fast at work and at home. They are addictive. Not too sweet but crispy like I like them. Super easy. I did make changes as I usually do. I used spelt flour instead of regular flour, only brown sugar (reduced it), I didn't use ground cloves since I didn't have any (I will next batch I bake), used 2 egg whites instead of one egg, added one more tsp. cinnamon, used 1/8 tsp. cayenne pepper for extra kick (was good) and used one tsp. less ginger but next time I'll use extra. I always morph it a bit but it was good and others at work and hubby liked it too. Thank you! God bless you!
