- 2 cups cannellini beans (cooked, see options below for cooking beans or use canned beans)
- 4 chicken sausage (links Aidell's Roasted Garlic and Gruyere Cheese, or use any pre-cooked chicken or turkey sausage)
- 2 1/2 tsp. olive oil (use more or less, depending on your pan)
- 1/2 onion (large, coarsely chopped, to flavor beans + 1/2 large onion, finely chopped, for stew)
- 1 Tbsp. minced garlic
- 14.5 oz. tomatoes with juice (petite dice)
- 1 tsp. oregano (dried Greek or Italian)
- 1/2 tsp. marjoram (dried)
- 2 cups chicken stock (I used my homemade chicken stock, but you can use 1 can chicken broth and add a bit of water)
- ground black pepper
- salt
- 1/4 cup basil (chopped, I used my frozen basil, 1/4 cup purchased basil pesto would work here too)
- 1 Tbsp. balsamic vinegar
- grated Parmesan (fresh, for serving, optional, but good)

I used chorizo as the sausage suggested in the recipe isn’t available in New Zealand I only had one tin of beans too but it worked out well and was absolutely delicious

Great recipe. I used roasted crushed tomatoes and spinach. Also, I cooked the soup in my pressure cooker instead of just pressure cooking the beans alone. Delicious!
