- 1/2 cup granulated sugar
- 1/2 cup candy cane (or peppermint candies, plus more for decoration, 1 8 ounce bag yields 1 ¼ c crushed peppermint)
- 1 cup vegan butter (I used Earth Balance)
- 1/2 cup non dairy milk
- 1 tsp. vanilla extract
- 2 tsp. peppermint extract
- 1 1/2 tsp. Ener-G Egg Replacer
- 2 Tbsp. warm water
- 3 1/2 cups flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- red food coloring (I like India Tree natural food dye and used 1/2 teaspoon)
- 1/2 cup chocolate chips
- 1 tsp. coconut oil
- peppermints (crushed)
