- coconut oil (for greasing the muffin pan)
- 1 1/4 cups sweet potato (roasted, mashed and cooled to room temperature, from 2 sweet potatoes)
- 1/3 cup sugar
- 1 Tbsp. maple syrup (Grade B if you have it)
- 1 tsp. vanilla bean paste
- 2 large eggs (beaten)
- 6 Tbsp. coconut oil (melted, butter if you're not opposed to dairy, or a combination of the two)
- 1/2 cup almond flour
- 120 grams teff flour (3/4 cup using the scoop and sweep method. See note above)
- 1 Tbsp. baking powder
- 1 tsp. canela
- 1/4 tsp. salt (I used Himalayan pink salt. Kosher and sea salt will work too)
- 5 freshly ground black pepper (turns of, probably 1/4 teaspoon if I measured)
- 2/3 cup pecans
- 1 Tbsp. maple syrup
