- 1 1/2 cups sunflower sprouts (rinsed and broccoli sprouts)
- 2 cloves garlic (fresh, preferably locally grown, crushed and minced)
- 1 cucumber (organic, diced unpeeled)
- 1/3 cup sundried tomatoes (chopped)
- 4 kale leaves (organic, thoroughly washed, chopped)
- 1/2 red onion (medium, julienned)
- 1 handful cilantro (rinsed and chopped)
- 1 yellow bell pepper (organic, thinly sliced)
- 2 1/2 cups arugula (organic, rinsed and chopped)
- 6 radishes (medium, washed and thinly sliced)
- 3 Tbsp. pumpkin seeds (raw organic)
- 10 cherry tomatoes (organic, halved)
- 10 Kalamata olives (organic, pitted and halved)
- 1 Haas avocado (peeled, sliced, and placed on top of the salad)
- 1 hot chili pepper (small fresh, sliced for garnish, to be eaten, optional)
- 2 Tbsp. lemon juice (freshly squeezed)
- 3 Tbsp. tahini (whole grain, preferably stone crushed)
- 3 Tbsp. water
- 1/2 tsp. salt (Himalayan, Celtic or other high quality, to taste)
- extra-virgin olive oil (Organic, add before serving to taste)
