- 7 potatoes (medium white, boiled until very soft, cooled and peeled, diced)
- 3 hard boiled eggs (peels and mashed)
- 1/2 red onion (medium, diced)
- 3 sweet gherkins (diced)
- 1 tsp. celery seed
- 1 dash beau monde seasoning
- 1 1/2 cups mayonnaise
- 1 tsp. mustard (ball park)
- juice (from the gherkins to moisten)

- milk (to moisten as needed)
- 1 stalk celery (diced)
- 1/2 cup sour cream (replace equal amount of mayo)
- 1/2 cup green bell pepper (or diced red)
- sweet relish (dollop of, to finish)
