- 2 cups quinoa (mixed, from Trader Joe’s – regular quinoa or red quinoa would work well here too)
- 4 cups water (for cooking quinoa – I cooked mine in my rice cooker on the white rice setting)
- 1 pkg. frozen mango (from Trader Joe’s, thawed OR 2-3 diced fresh mangos)
- 1/2 red onion (large, diced)
- 1 red pepper (medium to large, diced)
- 1 bunch cilantro (chopped)
- 2 cups shredded unsweetened coconut
- 1 cup toasted slivered almonds (unsalted, dry-)
- 1 1/2 cups raisins (I use the golden raisins from Trader Joes)
- 3 cups frozen edamame (thawed)
- 5 limes
- 4 Tbsp. balsamic vinegar (I used organic white balsamic vinegar)

Delicious!! The mango really stands out as well as the balsamic vinegar! I added small garlic fried scallops, wow! I used dried cranberries instead of raisins. I highly recommend this salad. The taste overall is unique and different!

I love this recipe, it tastes fresh and delicious I will definitely add it to my meal prep. It does make a large amount

It tasted delicious, but it made enough to feed a small village and I am just one small person. Again, very tasty just be mindful of how much it makes!
