Ingredients

- 2 floz bacon fat
- 1 sweet onion (medium, 1/2” dice)
- 8 Padrón peppers (large, seeded, stemmed, split lenghtwise)
- 3 cups yukon gold potatoes (skin on, blanched & cooled,1/2” rough dice)
- 1 cup napa cabbage (julienne)
- 1/2 cup grape tomatoes (roasted, cut in half)
- 3 Tbsp. garlic chives (fine chop)
- 4 cups pulled pork (smoked, pulled into large coarse pieces, see link on step 3)
- kosher salt (As needed)
- black pepper (As needed, fresh groud)
- 4 eggs (as needed)

Directions
- 1. In large sauté pan or rondeau, on medium high heat, add bacon fat
- 2. Add onions, pardon peppers and potatoes cook until edges begin to brown and heat through
- 3. Add cabbage, tomatoes, chive and pulled pork and continue to sauté until cabbage is just wilting
