- 1/2 calabaza (seeds removed, sliced into 1" strips, reserve the other half for another recipe, or simply double recipe for a larger crowd)
- 1 Tbsp. fresh lime juice
- 1 Tbsp. rice vinegar
- 1/2 Tbsp. honey
- 1 clove garlic (minced)
- 3 Tbsp. canola oil (test for preference)
- 1 pinch kosher salt
- 1/8 tsp. cumin (optional)
- 1 handful fresh cilantro (chopped, reserve until prior to serving)

I added a LOT more garlic...wife absolutely loved it...served it with onion soup mixed hamburgers patties...sans buns.
