- 5 potatoes (sliced, added to water for 20 minutes then drained and pat dry)
- 1/2 onion (sliced)
- 3 Tbsp. Cajun seasoning
- 1/2 head lettuce (washed and chopped)
- 1 cup cherry tomatoes (washed and chopped)
- 1/2 cup colby jack cheese (shredded)
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. sugar
- 1 Tbsp. poppy seeds
- 1/2 tsp. brown mustard
- 1/2 cup mayonnaise
