I enjoyed this recipe, easy to make. I read the reviews and I should have listened about the cheese, you don't need it. I'm not a fan of quinoa but I tolerate it, I found that Minute Rice makes a rice/quinoa mix that is very good and I used that. I also added in some paprika and a little bell pepper and that gave it more of a dirty rice flavor. It had a little kick to it and the flavor was amazing, I credit the bell pepper and the rice mix. The cheese threw the flavor off a bit, my mouth was confused but I like this and will make again, without the cheese.

My family enjoyed it very much. A small tweak that I did was to add some light brown sugar to cut some of the tomato. Definitely adding this, it will break up the chicken beef cycle.

It was okay, but the shrimp and quinoa and cheese was a strange combination, I think it would be better with something else. Quinoa was nice, could use it as a side dish on its own
