I made this tonight and it was fantastic! I followed the recipe exactly (except I had to use gouda cheese instead of fontina) and will definitely make it again...

We loved this! I didn’t have jalapeño peppers or fresh tomatoes so I used a small can of diced tomatoes and instead of the tomato paste and jalapeños I used approximately 3/4 cup of medium salsa that has the jalapeños and tomatoes in it

I cooked the quinoa early. My husband likes it spicy so he recommends keeping some of the jalapeno seeds.

This was delish, great feedback from dinner guests. I modified it slightly by using Gouda instead.

This dish was very tasty! The instructions were a little vague for the novice. Otherwise it was perfect.

Great! Not only was the recipe super easy, it is incredibly delicious. I followed the recipe exactly because I had everything it called for. Finishing it off in the oven kept it perfectly warm for dinner too!

I would make this again! This has a hint of Cajun spices. My husband and I loved it. I skipped putting it in the oven.
