- 4 sweet potatoes (medium, 2 lbs., peeled and diced into 1/2 inch cubes)
- 1 Tbsp. fish sauce (Tbsp)
- 1 cup fresh corn (could substitute canned corn, drained)
- 2 Tbsp. fresh tarragon (Tbsp, chopped, or dried Tarragon)
- 1/2 lemon
