I have been cooking Kasian for me years and took a brief hiatus. I was so craving red beans and rice, and found this recipe to match the way that I learned from chef Paul Prudhomme perfect!

This was excellent. Due to supplies I had on hand, I had to make a few substitutions. I used smoked sausage instead of andouille. I did not use ham hock or bacon. I didn't have fresh thyme so I used dried. This was excellent!!
