Spicy baked carrot fries with a secret ingredient to make them extra crispy. Served with spicy Sriracha ketchup!

Ingredients

  • 5 carrots (BIG rainbow, about 9 inches in length)
  • 1 tablespoon cornstarch (organic)
  • 1 tablespoon cajun seasoning
  • 2 teaspoons coconut sugar (or brown sugar)
  • 2 tablespoons olive oil
  • 1/4 cup ketchup
  • 1 tablespoon Sriracha

    Directions

    1. preheat oven to 425 degrees.
    2. Cut the carrots into thin fry sticks, about 1/4″ x 1/4″ thick. Place them in a big bowl.
    3. Sprinkle the corn starch over the cut carrots and give them a quick toss with your hands to coat them.
