- 500 grams pork tenderloin (cut into bite size chunks)
- 1 Tbsp. Cajun seasoning (add additional to preference)
- salt (to season)
- 1 Tbsp. olive oil
- 1 brown onion (diced)
- 2 cloves garlic (crushed)
- 2 cups chicken stock (use stock cube, you may use up to an extra half cup if required)
- 3/4 cup cream (Thickened, separate 1/2 cup plus 1/4 cup amounts)
- 250 grams penne pasta (use mini penne pasta)
- 1 cup shredded cheese (I use 3 cheese mix)
- 2 cups broccoli florets (cooked before adding to pasta)
- 1 cup cherry tomatoes (halved)
