Big hit with my family! Cooked the chicken and veggies in a grill pan. The chicken turned out so juicy and flavorful. Will definitely be making this again!!

The rice is very dry as is and everything else is okay. We meal prepped it for a few different days of the week, but I couldn’t stomach eating it more than once.

Changed the recipe slightly. Only used 1 pepper which along with the onion is ample for 2 people. Didn’t want 3 half’s of peppers going to waste. Also sprinkled the pepper and onion with a small amount of Cajun spice whilst cooking. Finally omitted the lime zest as didn’t want to confuse the flavours. Was lovely

The chicken was very nice and it was a quick recipe, however I used a bit more of the Cajun seasoning that I make myself and the vegetables took a bit longer to cook than stated but overall will be making again

Really yummy... needed a sauce like a cilantro lime dressing or tzatziki sauce on top. Other than that it was really good

First time using a recipe from here and I'm a beginner cook. This was simple, delicious and a huge family hit. So good.
