Description
Our take on the spicy New Orleans favorite replaces sausage with fresh chicken and Canadian bacon but keeps the Cajun flavor.

- 6 Tyson® Trimmed & Ready® Fresh Chicken Breast Tenderloins
- 1 tsp. Cajun seasoning blend
- 3 Tbsp. vegetable oil
- 1 large green bell pepper (chopped)
- 6 green onions (chopped)
- 3/4 cup celery (chopped)
- 1 cup long grain rice
- 3 oz. Canadian bacon (diced)
- 1 cup salsa (medium)
- 1 can reduced sodium chicken broth (14-oz.)

Directions
- Cut chicken into 1-inch chunks. Sprinkle with Cajun seasoning.
- Heat oil in large nonstick skillet to medium-high. Cook chicken 8 minutes or until golden brown. Remove from skillet.
- In same skillet, cook green pepper, three-fourths of scallions and celery 5 minutes or until pepper is crisp-tender. Add uncooked rice to skillet and cook 1 minute.
- Return chicken to skillet. Stir in bacon, salsa and broth. Bring to a boil; reduce heat to low. Cover and simmer 25 minutes or until rice has absorbed liquid and chicken is done (internal temp 170°F).
- Remove from heat and let stand 5 minutes. Sprinkle with remaining scallions before serving.

This was delicious and so easy to make! I was nervous about addding the salsa but actually it made the dish taste amazing. I will never make jambalaya out of a box ever again. This recipe is the way to go.

Some days you just need some comfort food. This was the perfect dish to satisfy that craving. Added Andouille and extra veggies to up the healthy factor. Was really looking forward to enjoying some leftovers but wasn't much leftover.. Yep will be making it again and soon

Turned out really good! Added a lot more Cajun seasoning because we like spicy. I also added 1/8-1/4 cup more rice like someone recommended. Next time I’m going to put more Canadian bacon and some andouille sausage. I served with corn on the cob with butter and more Cajun seasoning.

DELICIOUS!! As a Louisiana native this is absolutely a wonderful and quick fix for jambalaya cravings. It’s also become a quick family favorite! 😉

It was yummy. The kids liked it. I fried/sautéed the veggies and seasoning. I used a crockpot and added the uncooked rice, later.
