- 1 Tbsp. lemon juice
- 1 Tbsp. Dijon mustard
- 1 garlic clove (small, – skinned and crushed, use a microplane grater)
- 1 Tbsp. capers (– drained and finely chopped)
- 1/4 cup Grana Padano Parmesan (or freshly grated Reggiano)
- 5 Tbsp. extra virgin olive oil
- 1/8 tsp. sea salt
- freshly ground pepper (to taste)
- 2 slices country bread (sourdough, – cut in 1/2” cubes)
- 2 Tbsp. olive oil

- 1 1/2 tsp. chili powder
- 6 romaine lettuces (young, – rinsed, spun dry and cut in half lengthwise right through the center so the leaves stay attached together)
- Grana Padano Parmesan (or Reggiano, shavings as garnish, use a vegetable hand-peeler, optional)
