Description

Caesar salad makes for a delicious and light meal, but it isn't exactly portable. This recipe solves that problem by rolling all of the salad ingredients up in a tortilla for an easy to enjoy meal. You can easily pack this in a lunchbox for lunch at school or the office, or pack them in your cooler for a roadtrip for a healthy and quick meal on the go.

Ingredients

  • 5 tablespoons olive oil
  • 1 egg
  • 4 anchovy fillets
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon mustard seeds
  • 1 garlic clove
  • salt
  • ground black pepper
  • red wine vinegar
  • 120 grams Parmesan cheese
  • 4 chicken fillets
  • 1 egg
  • breadcrumbs
  • vegetable oil
  • 2 corn tortillas
  • lettuce

    Directions

    1. In a bowl, blend the oil, egg, anchovies, Worcestershire sauce, mustard seeds, garlic, and a pinch of salt and black pepper and a few drops of red wine vinegar. Add the cheese and mix well.
    2. Place the dressing in the refrigerator.
    3. Season the chicken with salt and ground black pepper and coat it with egg and breadcrumbs.
