- 1 1/2 tsp. salt (plus ½ teaspoon)
- 1 tsp. pepper
- 1 medium onion (chopped)
- 6 garlic cloves (minced)
- 2 bay leaves
- 1 tsp. oregano
- 1 tsp. dried thyme
- 2 large carrots (chopped)
- 1 bell pepper (chopped)
- 5 cups beef stock
- 14.5 oz. petite diced tomatoes (1 can)
- 16 oz. tomato sauce
- 2 Tbsp. Worcestershire sauce (use Lea & Perrins brand for gluten-free)
- 1 cabbage (small to medium head of, outer leaves and core removed, rinsed and chopped into 2-3 inch pieces, Mine weighed 3 lbs before I removed the core)
- 3 Tbsp. fresh Italian parsley (plus more for garnish)
