- 29 oz. beef broth (low-sodium)
- 24 oz. tomato sauce
- 29 oz. petite diced tomatoes
- 2 Tbsp. light brown sugar (packed)
- 1 Tbsp. worcestershire sauce
- 1 1/2 tsp. paprika (dried)
- 1 tsp. dried oregano (or 1 Tbsp chopped fresh)
- 3/4 tsp. dried thyme (or 2 1/2 tsp chopped fresh)
- 2 bay leaves
- 3/4 cup long-grain white rice
- 1 Tbsp. fresh lemon juice
- 1/3 cup fresh parsley (chopped)

This is the best Cabbage Roll Soup EVER! My husband doesnt like cabbage at all, but when I make this soup he cant resist.

i used the slow cooker method. the flavor was spot on, but it barely fit the crockpot so i only used 2 cups tomato sauce and 1 cup rice. i wasnt able to thin it like the recipe suggested, so my husband felt it was more risotto like, lol. he loved it though.i will make again, but with adjustments so i can thin it more.

I used this recipe as a base and made changes in the method I precooked the cabbage by sweating the cabbage onions and carrots until they were completely cooked I added the pre-browned meat (half beef half pork). I used tomato purée instead of sauce and added another 1/2 tsp of brown sugar. This recipe would be good for a slow cooker but that’s not my choice for soup I used a cast iron soup pot. I felt the base recipe was great and my soup was delicious

I used this recipe almost exactly except I used 1lb or ground beef one pound of sausage and a package of bacon and cooked it in a can cooker..It was fabulous!.Only thing I would change is it needs about 3 times the rice..Definatly will make again!

Followed recipe almost exactly, reducing oregano and used barley. Got thick, called it Stoup.

it was delicious I added a little more garlic and thyme and i uses dices and crushed tomato on place of sauce

I think this will be a new winter go to favourite for me! (Question though - this made between 16 - 18 cups but the servings say 8...? Is it 2 cups per serving? 320 cal/2 cups? That's unclear to me so if anyone can tell me, that would be great!)
I didn't drain the fat, and I actually had left over pork broth from a pulled pork shoulder bone recipe so I used that plus one sachet of beef broth and water, and about a cup of moussaka and a cup of tabouleh left over from my Lebanese takeout. For the tomato sauce, I used a 4 cheese one and a beef and mushroom one and the diced tomatoes were flavoured with garlic, and had some dijon/maple marinade left over from a chicken recipe I was making so I think those extras served to make it a bit less tomato-ey. I think next time I will leave out the rice as I find it's not necessary

Wonderful hearty soup! I care for my mom & we both love it. It's become a staple in our fall/winter menu. Like all soup recipes, seasonings can be adjusted to taste. But this one is delicious as is with tons of great flavor!

Love this soup! It reminds me of my Mom's Lazy Cabbage Rolls from when I was a kid, but I think I might like this even better. Hearty and just a touch of sweetness, and great for a cold winter's day.

It's ok. Doesn't really remind of cabbage rolls, though. Cabbage needs to be added earlier - it didn't get soft enough for my taste. Would probably add it to the ground beef early on. I did not find it necessary to drain the beef fat.

This soup was delicious and made enough to feed a crowd on a budget. I made a few minor alterations based on some previous reviews stating the soup tasted too much like Italian tomato sauce. I left out the thyme and or oregano and simply used salt and pepper. In place of those spices I used Hungarian Hot Paprika! In addition, I didn't have beef broth so I used vegetable broth. The result was delicious. I would also add that the beef could be reduced to one pound, as the soup was very meaty.

I will try another recipe next time. The seasonings made it taste too much like an Italian pasta sauce. Not for me.
