- 1 pinch asafoetida (hing)
- 1 pinch baking soda (optional)

- 3 tomatoes (finely chopped medium size)
- 1 onion (finely chopped large size)
- 1/2 inch ginger (crushed)
- 3 cloves garlic (crushed)
- 1 black cardamom (badi elachi)
- 2 green cardamoms (chotti elachi)
- 1/2 inch cinnamon (dal chini)
- 3 cloves (laung - 2 to 3)
- 1 bay leaf (tej patta)
- 1/4 tsp. turmeric powder (haldi)
- 1/4 tsp. red chili powder (lal mirch powder)
- 1/2 tsp. coriander powder (dhania powder)
- 2 Tbsp. olive oil (or butter)
- 1/2 tsp. fenugreek leaves (crushed kasuri methi)
