Very nice flavors I substituted onion packet with Italian seasoning packet and added salt,pepper, zucchini in place of string beans. I did not season until about last 30 minutes of cooking time. I took advice of one reviewer and added the mushrooms The more it sits the more flavorful it gets. I added Parmesan Cheese as a garnish. Will make again.

I have now made this several times, the ingredient list is too big for one pot so I split it into two as I love the soup rather than cutting back on the ingredients.

Use a really big pot. I made the recipe with red onions and added 2 bay leaves during simmering. My pasta cooker base was nearly overflowed. I jad a little left when I packaged it up so tossed in some angel.hair pasta and a little hot sauce and it thickened into a perfect pasta sauce too.

I made this for my mama, she LOVED it! I modified it a wee bit. I added 3 cups of frozen corn and cooked the onions a little bit in olive oil and a smidge of butter. I also added a 1/2 tbs of pepper which gave it a nice kick!
