- olive oil (or fat of your choice, about 2 tablespoons, use less if your sausages are very fatty, these were quite lean)
- 1 lb. italian sausages (4 links fresh)
- 1/2 yellow onion (sweet, cut into slivers)
- 1 bay leaf (large fresh true)
- 2 fresh thyme (small branches)
- 1 pinch dried oregano
- 1 Tbsp. chopped garlic
- 1 Tbsp. pesto (dried tomato, optional, try a dab of tomato paste instead)
- 1 lb. green cabbage (cut roughly into 1 to 2-inch squares or strips)
- 1 cup chicken stock

- pepper
