- 1 chinese cabbage (large)
- 4 liters water
- 100 grams sea salt (Celtic, though any salt would be fine)
- 1 clove garlic (peeled and crushed)
- 1 ginger (6cm, 2 inch strip of, peeled and grated)
- 100 mL chilli powder
- 1 dash coconut aminos (or soy sauce)
- 1 bunch spring onions (cut into strips)
- 1 radish (peeled and grated)
- 1 tsp. honey (this is needed to get the fermentation going – and the duration of the fermentation determines how much sugar remains in the end product)
