- 1 cup basmati rice (white)
- 400 mL light coconut milk
- 3/4 cup water (195ml)
- 1 Tbsp. virgin coconut oil
- 1 tsp. salt
- 2 tsp. virgin coconut oil
- 2 cloves garlic (crushed)
- 1 red chilli (medium, finely chopped and de-seeded)
- 1 onion (medium, finely sliced)
- 1 tsp. cumin seeds
- 1 carrot (medium, finely cubed/chopped)
- 1/2 cup sweetcorn
- 1/2 cup peas
- 1/2 cup beansprouts
- 1/2 tsp. turmeric
- 1/2 tsp. ground coriander
- 1/2 tsp. Garam Masala
- 1 Tbsp. medium curry powder
- 1 tsp. ground cumin
- 1/2 tsp. chilli (purée, I recommend 1/4 tsp if you don’t like it too hot)
- ground black pepper (to taste, I used about 10 twists of the pepper grinder)

Very good. It has a lot of potential for experimenting with different veggies and proteins. I had to cook my rice for an additional five minutes. If your rice is soggy, you probably just need to cook it longer!

Rice came out super mushy and I couldn’t taste any coconut. But it was edible when hungry.

This rice came out dank👌🏼 i highly recommend pairing it with a blackened catfish, if you’re trying to make a healthy family dinner. (I had to substitute diced grape tomatoes and a habanero pepper because I didn’t have the chili)

This was amazing. I added mushrooms and vegan sausage to it, and made the rice and veggies separate, then mixed them together. In my opinion, add more salt and chili paste (sriracha) than it recommends.

Unfortunately didn't come out light and fluffy but slightly mushy. I used jasmine brown rice and that took over a hour for the liquid to be soaked up.

Turned out great even though I did not have all the ingredients. Everyone at work LOVED it so I’m making a second batch just for them

Great, Not enough, though, so I made two batches. Easy to make but cutting veggies a little time-consuming. But final product makes my family think I’m a good cook!
