- 5 habanero peppers (roasted and finely chopped)
- 1/2 Orange
- 2 limes
- 1 red onion (medium, finely chopped)
- 2 tsp. white vinegar
- 3 lb. pork shoulder (cut into large stew-sized chunks)
- 2 platano (large hojas de, banana leaves; if you can’t find them fresh, you can usually find them in the freezer section with other ethnic foods. My grocery store carries Goya brand frozen banana leaves)
- 100 grams achiote paste (one box, also called annato seed paste)
- 1 1/2 cups orange juice (fresh squeezed)
- 2 cups lime juice (fresh squeezed)
- 4 cloves garlic (crushed)
- 1 pinch salt
- freshly ground pepper (A little, if desired)
